Marinade
⅛ cupolive oil
1 Tbsplemon juice
½ Tbspdijon mustard
½ Tbspbalsamic vinegar
1garlic cloves
minced
½ tspdried basil
½ tspdried onion powder
½ tspdried oregano
½ tspdried parsley
½ tspsalt
¼ tsppaprika
⅛ tspred pepper flakes
⅛ tsppepper

Instructions
Marinade
Step 1
Whisk together all Marinade ingredients in freezer bag. (Reserve ¼ cup Marinade for vegetables.)
Step 2
Add chicken to marinade bag, removing excess air; turn to coat (it will thicken); marinate (at room temperature up to 30 min. or in refrigerator up to 2 hrs.)
Step 3
Meanwhile, steam potatoes & carrots in lg. bowl with 2. T water, covered in microwave 5 min. Drain well.
Step 4
Add zucchini & onions to potatoes/carrots within 1/8 cup reserved marinade. Toss to coat & refrigerate if not using immediately.

Lay out two 18”x12” pieces of heavy foil (double line if you don't have heavy duty foil). Spray foil with oil; add one piece of chicken to each piece of foil. Evenly divide veggies between foil sheets, placing around chicken. Evenly dot each with cubed butter (2 cubes each). Seal foil packets closed & transfer to baking sheet.
Oven Instructions -Preheat oven to 400°F
Step 6
Bake (20-25 min.) until veggies are tender & chicken is cooked through (internal temp of 165°F).
Step 7
Carefully open foil & sprinkle each chicken breasts & surrounding veggies with mozzarella; leave foil open & broil until cheese is melted. Garnish with fresh parsley, lemon juice & freshy cracked salt & pepper.
Grill Instructions
Step 8
Heat grill to med.-high; add foil packets & CLOSE LID, and grill (15-20 min.) until veggies are tender & chicken is cooked through (internal temp of 165 °F).
Step 9
Carefully open foil & sprinkle each chicken breasts & surrounding veggies with mozzarella; leave foil open & leave foil open & close lid again until cheese is melted. Garnish with fresh parsley, lemon juice & freshy cracked salt/pepper.
