Avocado Sprouted Toast with Sautéed Spinach+ Kale Pesto

Ingredients
1 servings
1slice grain bread
sprouted

0.5avocado

1 teaspoonextra virgin olive oil

1 ½ cupsspinach

1 tablespoonkale pesto
Instructions
Step 1
1. Toast sprouted brain bread until just golden. Spread avocado on one side of the toast, mashing it with a fork.
Step 2
2. In a medium pan on medium-low heat, heat up olive oil. Add spinach, and saute for a minute or two until wilted. Transfer to the top of toast.
Step 3
3. Prepare pesto by blending ingredients in a food processor or blender until smooth (separate recipe). Spread on the top of toast, and top with chili lime seasoning. Add a poached egg (optional).
