Air Fried Egg Sandwich

I can remember my first introduction to air fryers. Why would I want a thing like that? was my first thought back in 2015. Then in 2019 I got a new job that required me to spend more time outside of the house. Getting home later in the evening meant I had less energy and desire to spend the little time I had left of the day monitoring the oven. I realized that as much as cooking is part of my daily life, the resulting kitchen mess and stove cleaning were definitely things I could do without. So I researched air fryers and had such a hard time deciding on which one would suit our needs. Fast forward to 2020 when the world shut down, and in some ways giving me more down time to watch and read tons of air fryer reviews. We finally decided on one and two years later it’s still working like the day we unboxed it! It was a life saver and anything I would put in the oven was placed in the air fryer instead. From cookies, to cornbread, to salmon, to baked potatoes. Believe it or not, I have yet to use it to make fried chicken or anything you might deep fry. One of my go-to breakfast meals has long been an egg sandwich. Sometimes I fry it in a cast iron pot using olive oil cooking spray, other times I poach it, and a recent favorite has been a hard boiled egg. Well, the way my memory has been set up lately I would put some eggs on to boil and then head out to the garden, for example, to spend time with God through working with my plants and vegetables. Before I knew it, I had hard burned eggs instead of hard boiled. I decided to figure out how to hard boil an egg in the air fryer. It was much easier than I thought! 270 degrees for 12 minutes and I would never again have to worry about forgetting that I had something cooking.

Instructions

Step 1
Put the egg(s) in the air fryer for 12 minutes at 270 degrees. Your time and temps may vary depending on your air fryer.

Wash and separate spinach to dry
Step 3
Toast English muffin (optional)
Step 4
Remove egg(s) from air fryer using tongs (they're hot) and place them in a bowl or container
Step 5
Run cold water over the eggs until they're cool enough to handle
Step 6
Tap the peak and bottom of the egg until there are cracks on both ends with a spoon or on the counter
Step 7
Tap around the circumference of the egg(s) until you notice the shell loosening around the egg(s)
Step 8
Peel the egg(s)
Step 9
Slice the eggs how you like to fit onto the sandwich
Step 10
Add cheese or other toppings and enjoy!
