Step 1
Press tofu for 30 mins
Step 2
1) Mix together the tofu, carrot, mushrooms, scallions, salt, pepper, 1 egg and the potato starch until mushy. Divide into 8 nuggets.

2) mix remaining egg and place in bowl

3) Over med heat, in oil non stick pan, add nuggets to pan via an eggy dip to evenly coat
Step 5
4) cook until brown both sides, about 2 mins per side
Step 6
Serve with spicy soy dressing
