Step 1
In a mixing bowl, combine cooked lentils, mashed potato, grated carrot, chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper. Mix well.
Step 2
Add breadcrumbs to the mixture and stir until well combined. The mixture should be thick enough to form patties.
Step 3
Form the mixture into patties of your desired size and shape.

Heat vegetable oil in a non-stick skillet over medium-high heat.

Place the patties in the skillet and cook for 3-4 minutes per side, or until golden brown and crispy.
Step 6
Remove the patties from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
