3 ozSultanas
2 flozOrange Juice
100gpoppy seeds
4 ozGlace Cherries
2 ozcandied Pineapple
2 ozDried Apricots
2 tbspsBuckwheat Honey
5 flozSingle Cream
plus a little extra to taste
2 ozFlaked almonds
¼ tspalmond essence
½ tspvanilla extract
20Sponge fingers
or as many as your dish needs
3 flozBrandy
more as needed for soaking
3 flozMilk
more as needed for soaking
Instructions
Step 1
Cook sultanas and orange juice gently until the liquid is absorbed.
Step 2
Grind poppy seeds with a stick blender (or in a pestle and mortar) until the poppy seeds resemble a wet sand.
Step 3
Chop cherries, pineapple and apricots.
Step 4
Gently cook honey in a pan. Then add cream and poppy seeds. Cook for about 10 minutes, stirring constantly.
Step 5
Add flaked almonds, almond essence and vanilla extract, saultanas, chopped fruit, and mix thoughly.
Step 6
Add a little sugar and more cream to taste.
Step 7
Soak sponge fingers in a 50:50 mix of brandy and milk. Fill the bottom of your dish with a layer of sponge fingers.
Step 8
Add half of the poppy seeds mixture.
Step 9
Repeat with a second layer of soaked sponge fingers and then the second half of the poppy seeds mixture.
Step 10
Before serving, decorate with flaked almonds or dust with icing sugar.
