Butternut Mac and Cheese

Instructions

Step 1
🧀 Preheat the oven at 200°C/180°C fan/Gaz 6.
Step 2
🧀 Bring a large pot of water to boil and cook the macaroni for 7-9 minutes. Then, drain and rinse under cold water.

🧀 Put the butternut in a saucepan and pour the vegetable stock on top. Simmer, covered, over a medium heat for 10-12 minutes until very soft.
Step 4
🧀 Meanwhile, heat the butter in a small saucepan and add the onion and garlic. Fry over medium heat for 4-5 minutes until caramelised and remove from the heat.
Step 5
🧀 Add the onion and garlic to the butternut. Pour the milk and add the salt. Blitz ideally with a handheld blender.

🧀 Add the cooked macaroni to the mixture and stir well. Put the mixture in your greased dish and top with grated Cheddar, black pepper (and parsley if you fancy)

🧀 Bake for 15-20 minutes until the cheese is bubbling and golden on top
