CHAR SIU PORK BURGERS

These burgers are inspired by char siu, which is a Cantonese barbecue pork dish and a popular flavour in Chinese cuisine. We’ve used 5% fat pork mince to keep the calories low and have added some extra veggies into the burgers in order to keep them nice and moist. A fresh, Asian-style slaw complements the flavours of the burgers perfectly and means they’re great when served at a summer barbecue!

Instructions

Step 1
FOR THE CHAR SIU GLAZE
Step 2
Wrap the grated courgette in a clean tea towel and squeeze out the excess liquid. You may be surprised at how much comes out!
Step 3
Place the courgette in a large bowl, along with the pork mince and the sliced spring onion. Mix well, then shape into four burgers, either by hand or with a burger press.
Step 4
Place in the fridge while you make the slaw and the glaze (or you can freeze the burgers to make this dish another day).
Step 5
Mix all the glaze ingredients together in a small bowl.
Step 6
Place the sliced pak choi, carrot and spring onion into a large bowl.
Step 7
Mix together the rice vine gar, light soy sauce and sweetener in a small bowl, pour over the slaw mix and toss lightly.
Step 8
Now, cook your burgers.
Step 9
Place a griddle pan over a medium to high heat and spray with low-calorie cooking spray.
Step 10
Brush one side of the burgers liberally with the glaze and place in the griddle pan, glaze side down.
Step 11
Brush the top side with glaze, and after 2 minutes of cooking, carefully flip the burgers.
Step 12
Brush another layer of glaze on top, and after 2 more minutes, carefully flip again.
Step 13
Cook for 1 minute, while brushing the burgers with a final layer of glaze.
Step 14
Flip again and cook for a final minute or 2, or until the juices run clear.
Step 15
Slice the bread rolls and fill with slaw.
Step 16
Place a burger in each and serve with any remaining slaw on the side.

SWAP THIS: Swap pork mince for turkey mince.
