Med Veg with Sweet Potatoes

I use chicken stock cubes for extra flavour. Optional: spicy chorizo chunks

Instructions

Step 1
Make sure to cut onions into chunky bits. Garlic with the most inner layer of skin on. About 4 small cloves cut in halves. Distribute all veg into a large tray. Add herbs and spices all over the veg. I dissolve the stock cubes in a tiny little bit of boiling water (into a ramekin) and then just drizzle it all over the vegetables. Also add some olive oil. Mix it all well. Tip for a quicker cooking time in the oven. Pre-cook / heat some of the veg, (sweet potatoes, aubergine, and especially the carrots) in the microwave (each veg separately) beforehand. Just for a few mins. Eg. 1 aubergine 2 mins 3 carrots 4 mins 2 sweet potatoes 4 mins. I usually use a green bell peppers to make it more colourful but any will do.
