Step 1
Cut the zucchini into 0.5 cm thick rounds and put them in a bowl.
Step 2
Add salt, sugar, vinegar, and set them aside for about 15-20 minutes until marinated. This is the perfect time to make a tzatziki sauce.
Step 3
Place a deep frying pan with the sunflower oil over medium-high heat. You want the oil’s temperature to reach 180ο C (350ο F).
Step 4
Fill a bowl with water and put the flour and the salt into another bowl.
Step 5
Dip each zucchini slice successively into the water and the flour, 2-3 times, and set them aside. Alternatively, you can -very carefully- dip them in the water again and then put them in the pan. This method requires a lot of attention so that not much water is left on the zucchini before it goes into the hot oil.
Step 6
Fry them in batches for 4-5 minutes.
