Ingredients
4 servings

1 cupquinoa
uncooked

2 tspolive oil

½ cuponion
chopped

1 teaspoongarlic minced

1 x 15.5 ozcannellini beans
can, drained and rinsed

1 x 14 ozcan quartered artichoke hearts
drained and roughly chopped

¼ cupwater

2lemons
zested and juiced

½ tspsalt

¼ tspground black pepper

2 tablespoonsfresh parsley
chopped

4 ozfeta cheese
crumbled
Instructions
Step 1
Cook quinoa as directed by package

Step 2
In medium non-stick skillet over medium heat, heat oil. Cook onion and garlic 2 to 3 minutes, until translucent.



Step 3
Stir in beans, artichokes, quinoa and water. Cook 4 to 6 minutes until hot.


Step 4
Stir in lemon juice, salt, pepper and parsley. Adjust seasoning to taste.




Step 5
Serve topped with feta cheese and lemon zest.
