Step 1
Drain the tuna
Step 2
Reserve the brine from the capers
Step 3
Reserve 1 tbsp of oil from the anchovies but discard the rest
Step 4
Blend all ingredients in a food processor. Add water to thin to desired consistency
Step 5
Blanch the asparagus in boiling water for 3 minutes and serve with tonnato
