Spicy Beans and Chorizo on Toast

Beans are your friend when you are trying to lose weight. As well as being low in energy density and high in protein and fibre they are also a rich source of prebiotics, all properties which might help to reduce hunger. A little low fat oil has been used in this recipe as the chorizo will fry in its own fat. Additionally to ensure that the energy density remains low, no fat or spread has been put on the toast, but that's ok, it really doesn't need it! If you want less spice remove the chilli, as the paprika and chorizo still provide a smoky flavour. If time is tight you can substitute the beans and tomato for a regular tin of baked beans.

Step 1
Remove any covering from the chorizo then slice it thinly. Spray around 10 squirts of light oil into a large saucepan over a moderate heat and fry the chorizo and the finely chopped onion, garlic and chilli for around 5 minutes. Then add the chopped tomatoes, a drained tin of cannellini beans, the paprika, oregano and a sprinkle of salt and black pepper. Cook over a moderate heat for 20 minutes until the sauce reduces, stirring regularly to ensure that it does not stick. Toast the bread (80g of untoasted bread per portion) and pour over the spicy beans.
