Ingredients
6 servings

1 x 13.5 ouncecan coconut milk

¼ cupcreamy peanut butter

¼ cupdark brown sugar
firmly packed, can sub monkfruit, coconut sugar, maple syrup

1 tablespoonsoy sauce
or coconut aminos

1 ½ teaspoonsred curry paste
or triple it

1 tspvegan fish sauce
optional

0.5lime
juiced

2cloves garlic
crushed

2 tspginger paste
I use frozen ginger cubes, or fresh, grated, ginger
Instructions
Step 1
Saute ginger, garlic, & curry paste in a little coconut oil for a couple of minutes.
Step 2
Add all other ingredients, whisking until smooth. Cook over medium heat for 3 minutes, stirring frequently .
Step 3
Add additional soy sauce, lime juice & Sriracha to taste.
Step 4
Serve over rice, noodles, zoodles, or a combination. We eat it with tofu or chicken, sliced cucumbers, steamed Broccoli, sliced red peppers, bean sprouts, grated carrots, cooked sweet potatoes, fresh or steamed spinach.
Step 5
Garnish with fresh chopped cilantro, chopped peanuts, red pepper flakes.
