Instructions
Step 1
Rinse blueberries and add 2 tablespoons of flour. Coat well. Set aside. (This is an important step! Do not skip it!)
Step 2
In a large bowl, cream the sugar and butter together.
Step 3
Add the milk, vanilla, and eggs to the creamed mixture. Combine well. Set aside.
Step 4
In a medium bowl, combine the flour, salt, and baking powder.
Step 5
Add dry ingredients to the sugar, butter, egg, etc mixture. Combine well.
Step 6
Add floured blueberries. Mix well.
Step 7
Fill 3/4 to the top of a muffin tin.
Step 8
Sprinkle top of each with 1 teaspoon sugar.
Step 9
Bake at 375° F. (190.5° C.) for 12 - 15 minutes or until done.
NOTE:
Step 10
The original Jordan's blueberry muffins recipe called for the muffin tin to be filled to the TOP of the muffin tin. This will create large muffin tops! So choose which you prefer. 😃
