Instructions

Step 1
If you are going to add this to a rice dish, start the rice first. Heat the water in the microwave for 2 minutes. As it heats, cut the red onion in half and then cut 1/4 inch slices and place in a bowl that will hold 4 cups. Add the water, vinegar and sugar to that bowl and stir until the sugar has dissolved and the onion layers have separated. Set a timer for 15 minutes

Step 2
If you are going to add a protein, now is the time to get it cooking. Zest the lime, juice it and combine together.
Step 3
Split, deseed and cut the avocado into 1/2 inch cubes. Peel and slice the mango into 1/2 inch cubes Wash and chop the cilantro
Step 4
In a large bowl, combine the lime juice, cilantro, avocado and mango. The lime juice's acidity will prevent the avocado from turning brown, so do this right away.
Step 5
Once the onions have pickled for 15 minutes, drain them and add them to the bowl with the avocado and mango. Add the seasonings and stir to combine well. The more you stir, the creamier the salsa will get, thanks to the avocado.
