1 tspgochujang

500mlvegetable broth

1 tsprice vinegar

1 tsptomato purée

6rice paper sheets
square shaped for better shape, a deep dish plate filled with room temp water

½ cupchickpeas
rinsed and drained

100gfirm tofu

2 handfulsfresh spinach

1spring onions

sesame seeds
chopped, for serving
Instructions
Step 1
Chop and sauté onion garlic carrot for a couple of mins
Step 2
Add veg broth, Gochujang, tomato paste, vinegar. Bring to a boil and then let simmer for around 12 mins
Step 3
Meanwhile, dip rice papers in room temp water for around 10 secs. Then tightly roll into tubes
Step 4
Add remaining ingredients and rice papers into the soup. Let cook for a few more minutes
