Ingredients
4 servings
500gbeef strips
1 teaspoonchinese five spice powder
2 tablespoonspeanut oil
2cloves garlic
finely chopped
ginger
3 cm, finely chopped
1brown onion
small, thinly sliced
1red capsicum
small, cut into strips
1yellow capsicum
small, cut into strips
1 headbroccoli
florets chopped
4spring onion
finely sliced
For the Black Bean Sauce
½ cupchicken stock
1 teaspooncorn flour
1 tablespoonsoy sauce
reduced salt
2 tablespoonsblack bean sauce
To Serve
Instructions
Step 1
Combine the five spice powder and beef strips in a bowl.
Step 2
For the sauce: Add all ingredients together in a small jug or bowl. Set aside.
Step 3
Cook the soba noodles in boiling water for 1 minute, then drain and set aside.
Step 4
Heat half the peanut oil in a large frying pan/wok and add the beef in batches. Sear each side for approx. 1 minute or until browned. Continue until all beef is seared. Remove and set aside.
Step 5
Heat the remaining peanut oil in the same frying pan/wok over high heat. Add the onion, garlic and ginger and stir-fry for 2-3 minutes. Add the capsicum, spring onion and broccoli to the pan and stir-fry for 3-4 minutes.
Step 6
Add the sauce to the vegetables and stir through quickly over high heat. Then add the beef strips back to the pan and stir through until the sauce has thickened slightly (one minute). Turn off the heat.
Step 7
Serve stir fry beef and veg over soba noodles. Garnish with cashews and sliced spring onion.
