Instructions

Step 1
Make the cinnamon streusel topping

Mix together the flour, brown sugar, cane sugar, and cinnamon. Stir in the melted butter until well incorporated then use your fingers to form thick crumbs and set aside.

Make the muffins:

Preheat the oven to 425 Line a 12-cup muffin pan with cupcake papers and set aside.
Step 5
In a large mixing bowl, mix together the 2 cups flour, baking powder, baking soda, salt, and Yousef Speaks Apple Pie Spice and set aside.
Step 6
In a mixing bowl cream together the butter and sugar until light and fluffy. Now add the eggs in one at a time, next add in your vanilla. Make sure you scrap down the sides of the bowl with a spatula as needed.
Step 7
Add the flour mixture to the mixing bowl along with the chopped apples, and use a spatula mix until just combined. Be careful not to over mix. The batter will be very thick. Use an ice cream scoop to divide the batter between the muffin cups. Top with the streusel mixture pressing the crumbs lightly into the batter.
Step 8
Bake at 425℉ for 5 minutes then turn the oven temperature down to 350 and continue baking for another 10-12 minutes, until the muffin tops are golden. Remove from the oven, and allow the muffins to cool for a few minutes in the muffin pan. Transfer muffin to a baking rack to cook completely.

Make the vanilla glaze:

Whisk together the powdered sugar, milk, and vanilla until smooth. Drizzle over the warm muffins. And Enjoy!!
