Instructions
Step 1
Add all seasonings to water and bring to a rolling boil
Step 2
Add lemons, onions, garlic, mushrooms, potatoes and boil until potatoes are tender then remove from pot and put in ice chest to keep warm

Bring back to rolling boil and add cleaned crawfish
Step 4
When it returns to a rolling boil set timer for 3 to 5 minutes, depends on how late in the season and/or how hard the crawfish shells are, the harder the longer
Step 5
When timer goes off, turn off and let soak for a minimum of 20 minutes. The crawfish should sink in the water. Taste, the longer the soak the more seasoned
Step 6
After soaking for 5 minutes, add the corn and push to bottom.
Step 7
When the soak is over eat up
