2 cupswhole wheat flour
Freshly ground, white
1 ½ cupswhole wheat sourdough
starter

1 tspsea salt

1 cupwater
filtered
Instructions
Step 1
Mix everything except the salt. Let rest (autolyze) for 30-60 minutes. Knead. Let rise until almost double, doing four sets of stretch and folds during the first two hours of rise time. Shape into a loaf and let rise until nearly double. Bake in a preheated oven for 30-40 minutes. Remove from pan ( if using) and let cool before slicing.
