Step 1
Drain the kimchi liquid and put it in a mixing bowl. Chop the kimchi into smaller pieces, and put them into the bowl, in the liquid.

Chop the scallion and add it on top of the kimchi.
Step 3
Add the flour, cornstarch, salt, egg, garlic and water. Mix until everything is combined. Adjust the flour and the water quantity until you get a creamy pancake batter.
Step 4
Place a small pan on medium heat. When the pan is hot, add some vegetable oil for frying and scoop half of the mixture into the pan. Fry for approximately 3 to 4 minutes on each side, until crispy on the outside. Repeat this step with the rest of the batter.
Step 5
Place the pancakes on a serving plate and top them with sesame seeds. Optionally but highly recommended, serve them with a sauce of soy sauce, honey and sesame oil.
