Ingredients
4 servings
For the rice
For the edamame
1 ½ cupsfrozen edamame
shelled, thawed
⅓ cupunsalted roasted peanuts
finely chopped
1 clovegarlic
small
2 teaspoonssesame oil
1 tablespoonsriracha
For the sauce
1 teaspoonscoconut aminos
3 tablespoonscoconut aminos
3 tablespoonsrice vinegar
½ tablespoonmaple syrup
1 tablespoonarrowroot
2garlic cloves
minced
1 tablespoonminced ginger
¼ teaspoonred pepper flakes
For the broccoli
Instructions
Step 1
Toast rice for 3-5 mins on medium heat, add sesame oil and salt to taste. Toast 2 mins more. Add in stock, bring to boil. Reduce heat to low, cook for 25 minutes, them let stand covered for 10 minutes
Step 2
Combine all edamame ingredients, set aside at room temp
Step 3
On medium low heat, in a saucepan, combine all the sauce ingredients, making sure to whisk in the arrowroot. Cook sauce until thickened - 2 to 4 mins
Step 4
Steam broccoli, over the boiling water for 3 mins. Combine broccoli and scallions into the sauce.
Step 5
Plate components and top with sesame seeds
