Step 1
Add water to pot and bring to a low boil. Dice potatoes, celery, onion, and garlic and add to boiling water. Add salt and pepper and allow to simmer until potatoes start to "melt." Stir occasionally and add more water if needed, but not a lot more. You want the potatoes to absorb the flavor during this stage.
Step 2
Once the vegetables have cooked, slowly add more water, about 1 cup. Add corn and drained can of tuna (small or medium can). Add milk (and/or cream) and continue to simmer and stir occasionally. Be sure to let the milk fully combine with the soup. The tuna will lose most of its fishy taste and smell as the milk heats up. Add parsley, add oregano to taste, then allow to cool and serve.
