2 tablespoonsolive oil

1lemon
juice of

1garlic clove
minced

1 teaspoonground cumin
1can black-eyed peas no-salt-added
drained and rinsed

1red bell pepper
seeded and chopped

1shallot
finely chopped

2scallions
green onions, chopped

2 tablespoonsfresh dill
chopped

¼ cupfresh parsley
chopped

½ cuppitted kalamata olives
sliced

½ cupcrumbled feta cheese
Instructions
Step 1
In a large bowl, whisk together the olive oil, lemon juice, garlic and cumin.
Step 2
Add the black-eyed peas, bell pepper, shallot, scallions, dill, parsley, olives and feta.
Step 3
Toss to combine. Serve.
