½ cupred onion
thinly sliced

½ cuppitted kalamata olives

Step 1
In a medium bowl or jar, whisk together all ingredients for the dressing until smooth and creamy.











Step 2
Store in the fridge until ready to toss with the salad.

Chop all the veggies, making sure everything is roughly the same size, and toss together in a large bowl.








Step 4
Just before serving, drizzle the dressing over the salad and gently toss to coat.
Step 5
Season with additional herbs or cracked black pepper, if desired.
