Eggplant and garlic preparation
Step 1
Start by preheating the oven at 200°C. Cut the eggplants in half and score them diagonally in both directions. Massage them with about 1tbsp of oil in total on the open side and place them on an oven paper covered tray scored face down. Place them in the oven for 1 hour. Cut the top off the head of garlic, add a touch of salt and olive oil and close it tightly in alluminium foil. Put it in the oven as well but for only 30 minutes.

Step 2
With a spoon, take the eggplants and empty them in a bowl, as well as the garlic (squeeze it with your hands once it’s cooled down). Add tahini, salt, 1tbsp olive oil and the lemon juice. Mash with a fork until the mixture is somewhat smooth. Add some olive oil on top as well as the mint leaves to top it off
