Instructions

Step 1
For the custard, in a bowl combine egg yolks, sugar, cornstarch and vanilla, and mix well. Add a bit of milk ( about 100ml), and mix until combined. Add lemon zest and mix again until combined. In a saucepot bring to a boil(but don't boil) the rest of the milk and start to add the cornstarch mixture( in a thin stream). Whisk vigorously until everything is well combined. Work quickly to prevent lumps. Once the custard has thickened, remove it from the heat, cover it with cling film in contact and let it cool to room temperature.
Step 2
Preheat oven to 200C (fan).
Step 3
Transfer the puff pastry to the baking tray, covered with parchment.
Step 4
Spread all custard on top of the puff pastry sheet, leaving about 1cm free from the edges.
Step 5
On half of the pastry arrange the blueberries. You will need to cut it into squares once fold, so visually divide it into the 4-5cm squares and place three blueberries in the middle of each square.
Step 6
Fold the pastry and secure the edges, using a fork.
Step 7
Brush the top with egg wash( imply combine egg yolk with milk)
Step 8
Cut into squares, sprinkle with almond flakes and bake for 15-18 minutes or until golden.
Step 9
When ready, let it cool. You can serve it warm or chilled. I personally prefer to chill it a few hours in the fridge.(but let it cool to room temperature first.
