For the strawberry milk:
Step 1
Wash, chop and pat dry the strawberries.

Blend the strawberries until smooth then strain the purée into a bowl. Set aside.

In a medium sauce pan over medium heat, whisk the sugar and the milk until fully dissolved.

Take it off the heat, add the strawberry purée, mix until well combined.

Set aside. let it cool down completely before using.
For the mascarpone whipped cream:

In the bowl of your stand mixer thatâs fitted with a whisk attachment, whip the cold heavy cream until stiff peaks.

Add the mascarpone, vanilla extract, strawberry extract, powdered sugar and 1/4 cup of the strawberry milk that we prepared earlier. Continue mixing on medium speed until well combined.

Note: do not over mix, make sure that the strawberry milk is room temperature, and taste the whipped mascarpone cream, If you want to add more strawberry extract, go ahead.
Assembly:

Transfer the mascarpone whipped cream into a piping bag. I like this method because it helps with evenly distributing the cream.
Step 10
In a shallow bowl, dip the lady fingers into the strawberry milk. They should be well coated on both sides.
Step 11
Note. Donât soak them for too long, just make sure that theyâre well coated on each side. Theyâll soften as they sit.
Step 12
Place a layer of the lady fingers into a 8x8 dish. If necessary, trim the lady fingers to make them fit better. Spoon a bit of the strawberry milk on top of the lady fingers. (Donât add too much)

Pipe a layer of the mascarpone whipped cream over the top. Smooth it out with a spoon or an offset spatula.
Step 14
Alternate between the lady fingers and the mascarpone whipped cream until you run out.
Step 15
6 layers total: 3 layers of mascarpone cream and 3 layers of lady fingers.
Step 16
Using a bench scraper, smooth out the last layer of cream.
Step 17
Cover with plastic film and refrigerate for 8 hours. Preferably overnight.
Step 18
Gently peel back the plastic film.
Step 19
Cut into 6-8 slices.
Step 20
Cut out 6-8 small hearts and place them on top of each slice.
Step 21
Dust with freeze dried strawberry powder.
Step 22
Carefully peel back the hearts using tweezers.
Step 23
Optional: I used the lowest setting on my kitchen torch to smooth out each heart. This will give you a clean finish. But be careful, you donât want to burn the strawberry powder.
