I make a full 8 quarts Instapot for this recipe. It is very hearty and after it is done you can add more water if you don't like it quiet so hearty. There is usually enough flavour to allow for this.

Ingredients

10 ozmixed dried beans
1 packagedried onion soup mix
1 x 28 ozcan of diced tomatoes
3carrots
chopped
1onion
large, chopped
4celery
chopped
2 clovedgarlic
2 cupsbrocolli
chopped
2 cupscauliflower
chopped
1 cupzucchini
chopped
1 cupgreen beans
1 cupcorn
3 cupsfresh spinach
or frozen, chopped
spray oil
10 cupswater
Chicken bullion
2 TblsCurry powder
1 tspcumin
chili flakes
to taste
salt
to taste
pepper
2 poundslean ground beef
Instructions
Step 1
- put beans in 2 quarts of water and add onion soup mix in Instantpot. Cook for 15 minutes on high and quick release.
- remove beans and water - put on saute and brown pork. Add any curry and cumin that you want to develop their flavours
- add onions and peppers and saute for 3 minutes
-add beans and water back to instantpot
- add all other veggies - cook under pressure for 5 minutes
- taste add, salt pepper and any other flavour adjustments.
- process again for 3 minutes if veggies are not soft enough or flavour needs to develope more.
-Serve
