Poblano and Potato Tacos

Instructions

Step 1
In a large skillet, heat oil over medium-high heat. Add sweet potatoes, cover, and cook until soft, about 8-10 minutes.
Step 2
Remove the lid and cook potatoes, stirring occasionally, until potatoes are golden brown and crispy, 8-10 minutes.
Step 3
Lightly coat another skillet with cooking spray, gently add onion and chile, and sauté until soft, about 4-6 minutes.
Step 4
In a large bowl, combine parmesan and chipotle powder. Add warm potatoes and onion mixture. Toss to coat. Season with salt to taste.
Step 5
To build tacos, divide potato mixture equally among tortillas. Top evenly with Chile Cream Sauce (see recipe, or purchase)
Step 6
NOTE: For a different chile flavor, substitute cayenne pepper.
