Scottish eggs

One way to use up hard boiled eggs from Easter! Crispy on the outside and soft the inside. The sausage gives these eggs a nice kick. I first tried Scottish eggs at a Scottish festival in Greenville, SC and decided to make them myself. They make for a hardy breakfast or snack.

Instructions

Step 1
Preheat airfryer to 350 F. Put the flour, beaten egg, and crushed breading into separate bowls or ziplock bags.

Step 2
Divide the ground sausage into 4 parts. Flatten each to 1/4 in thickness then place the hard boiled egg on top of the sausage. Surround the egg completely with the sausage.
Step 3
Roll the wrapped egg in flour. Next dip it in the egg to wet completely. Lastly roll in the bread crumbs.
Step 4
Place onto oven safe baking dish and spray lightly with oil. Airfry for 20-25 min until golden brown and crispy. Serve with mustard and enjoy!
