Ingredients
4 servings
3 cupsall-purpose flour
4 tspbaking powder
2 tspground cinnamon
2 tspground ginger
½ tspnutmeg
freshly grated, eyeball it
½ tspsalt
4egg
large
⅔ cupdark brown sugar
packed
1 cupcanned pumpkin puree
1 ¼ cupmilk
½ cupmolasses
½ cupbutter
melted, plus some to grease the waffle iron
1syrup
whipped cream, or fresh fruits for topping, to pass at the table
Instructions
Step 1
Preheat a waffle iron.
Step 2
In a large bowl, combine flour, baking powder, cinnamon, ginger, nutmeg and salt.
Step 3
In a medium bowl, beat eggs and brown sugar until fluffy, then beat in pumpkin, milk, molasses, and melted butter.
Step 4
Stir the wet ingredients into the dry ingredients until just until moist.
Step 5
Do not over stir the waffle batter.
Step 6
Brush the waffle iron with a little melted butter and cook 4 waffles, 4 sections each.
Step 7
Serve with toppings of choice.
