0.5onion
chopped
2 clovesgarlic
minced or pressed
10 ouncesfirm tofu
drained
¼ cupwalnuts
finely ground
½ cupbrown lentils
cooked
1 ¼ cupsquick-cooking oats
3 tablespoonssoy sauce
2 tablespoonsBBQ sauce
or ketchup, plus additional for topping
1 tablespoondijon mustard
2 teaspoonsdried parsley
½ teaspoonthyme
½ teaspoonsage
½ teaspoonrosemary
Instructions
Step 1
Preheat the oven to 375ºF/190ºC.
Step 2
Sauté the celery, onion, and garlic on high heat in a skillet with a few drops of water for 5 minutes, until tender. Remove from heat and cool.
Step 3
Mash the tofu in a large bowl. Stir in the cooked mixture and remaining ingredients, and combine well.
Step 4
Spoon the mixture into a parchment-lined loaf pan. Top with a layer of BBQ sauce.
Step 5
Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
