French Onion Toast

A super-sized version best part of the French onion soup... (the cheesy crouton, of course!)...
This crispy parmesan grilled toast is topped with a pile of caramelised onions and a ton of gruyere and mozzarella cheese - the entire thing is broiled until the cheese is melty, bubbling and blistered. The most delicious autumnal treat!

or beef stock

Instructions
For the caramelised onions
Step 1
First, make your caramelised onions. In a cast iron or nonstick frying pan, melt butter over a medium high heat. Add in sliced onions, and cook over medium high heat for about two minutes before reducing heat to medium.
Step 2
Leave onions cooking over medium heat, only stirring periodically. You want them to get nice and soft and brown so this requires a bit of patience - if you stir them constantly, they won't develop their colour as quickly. After about 5 minutes of slowly cooking, add in salt, pepper, fresh thyme leaves (optional) and one tablespoon of water. Continue cooking for another 8-10 minutes, adding in the second tablespoon of water and the balsamic vinegar when it looks like the onions are getting super soft and browned. Cook off the excess liquid from the vinegar and water and set onions aside.

Preheat broiler (if you're in the UK, this is called a grill), to 275C/525F.
For for the parmesan grilled bread
Step 4
Heat another frying pan to a medium heat. Butter both sides of the sourdough bread and press the parmesan cheese onto the butter on both sides. Fry the bread in the pan until both sides are crispy and golden brown.
Assembling + baking the toast
Step 5
Place parmesan grilled toast on small baking tray. Mix the gruyere and mozzarella cheeses together. Add half of the cheese mixture to the toast, pile on the caramelised onions and then finish with the other half of the cheese on top. Bake under the broiler/grill in the oven for 3-4 minutes. The cheese should be completely melted and starting to bubble/blister when the toast has finished cooking. Cut in half and enjoy!
