Molly's Meatballs With Onion Sauce and Mashed Potatoes

At the Ministry of Magic on the morning of Harry's hearing, Mr. Weasley bumps into Kingsley Shacklebolt. They pretend not to know each other but Mr. Weasley manages to whisper that Mrs. Weasley is making meatballs for dinner should he wish to stop by. (Harry Potter and the Order of the Phoenix, Chapter 7, J.K. Rowling) I find it best to prepare to be cooking for an hour and a half, and to prep the meatballs and refrigerate them for about half an hour before you cook them. I serve these with fresh mashed potatoes and always make an extra pack of brown gravy. Pairs well with seasoned green beans! We double the recipe because we have 6 members of our household!

Instructions

Meatballs

Step 1
Combine the beef, bread crumbs, egg, onion, parsley, salt, black pepper, and nutmeg in a large bowl and mix thoroughly.
Step 2
Heat the oil in a skillet.
Step 3
Form the meat mixture into SMALL (about 1 inch) balls, and working in batches, fry the balls on each side until well browned, about 4 minutes per side.
Step 4
Transfer the meatballs to a dinner plate.

Onion Sauce

Step 5
Add 2 tablespoons oil to the skillet and heat.
Step 6
Add the chopped onion and cook over medium-heat, stirring occasionally, until golden brown.
Step 7
Add the flour, and stir to combine.
Step 8
Stir in the chicken broth and cook, stirring constantly, until thickened and bubbling.
Step 9
Return the meatballs to the skillet and simmer for 15 minutes.

Fluffy Mashed Potatoes

Step 10
Place the potatoes in the pot and cover with water.
Step 11
Bring to a boil, then reduce the heat, and simmer about 25 minutes or until the potatoes break apart when pierced with a fork.
Step 12
Drain the potatoes.
Step 13
Add the butter, milk, salt and black pepper slowly; mixing on medium with a hand mixer until the potatoes are light and fluffy.
