Ingredients

12 ouncesbeef sirloin
or tenderloin, thinly sliced into strips
8 ounceswide egg noodles
1onion
small, finely chopped
2cloves garlic
minced
1 tablespoonolive oil
1 tablespoonall-purpose flour
1 cupbeef broth
1 tablespoonworcestershire sauce
1 teaspoondijon mustard
½ cupsour cream
salt
to taste
pepper
to taste
fresh parsley
chopped, for garnish
Instructions
Step 1
Cook the Noodles: Cook the wide egg noodles according to the package instructions. Drain and set aside.
Step 2
Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the thinly sliced beef strips and cook for about 2-3 minutes until they are browned on all sides. Remove the beef from the skillet and set it aside.
Step 3
Sauté Onion and Garlic: In the same skillet, add the finely chopped onion and minced garlic. Sauté for about 2-3 minutes until they become soft and fragrant.
Step 4
Make the Sauce: Sprinkle the flour over the onions and garlic and stir to combine. Gradually add the beef broth, Worcestershire sauce, and Dijon mustard while stirring continuously. Allow the sauce to simmer and thicken for about 3-4 minutes.
Step 5
Combine Beef and Sauce: Return the cooked beef strips to the skillet and stir to coat them with the sauce. Cook for an additional 2-3 minutes until the beef is heated through.
Step 6
Add Sour Cream: Reduce the heat to low and stir in the sour cream. Cook for another 2 minutes, being careful not to boil the sauce. Season with salt and pepper to taste.

Serve: Serve the beef stroganoff over the cooked egg noodles. Garnish with chopped fresh parsley.
