Cherry Tomato Shallot Pasta

Step 1
Cook your pasta in a pot of salted boiling water until al dente.
Step 2
While your pasta is cooling fill a large pan with olive oil, add garlic and cook for 1-2 mins. Add in shallots, season and cook over a low heat for 5-7 mins until softened but not coloured.
Step 3
Add cherry tomatoes, cook for 7-10 mins over a low heat until tomatoes start to break down. Pour in 100ml pasta water, add more if needed.
Step 4
Strain pasta and add to tomatoes, mix in parmesan and basil.
Step 5
Serve with fresh parmesan and basil.
