Step 1
Oven 300. In 12" skillet, brown the sides of the sausages. Set aside. Chop bacon into 1" pieces and brown in skillet. Add onions to skillet and cook until lightly browned. Add carrots and cook until softened. Set mixture aside.
Step 2
In a lasagna pan or lg. Dutch oven, layer the onion mixture with sliced potatoes and a sprinkling of parsley and sage between each layer. Season layers to taste. Pour chicken stock over the layers and top with sausages. Bake at least 1½-2 hrs. before checking that potatoes are tender and sausages are cooked through. Tear extra sage leaves and sprinkle over the top to garnish.
Step 3
Serve with soda bread and Guinness (mandatory).
