This is a simple and very customizable recipe that my mother frequently made for my family. It came from a fundraiser cookbook made by the ladies in Shamrock, Ok in the 80’s.

Step 1
Brown ground beef and onions. Drain any fat. Add canned ingredients. Mix well. In a 9x13 pan spread out 6 corn tortillas. Add a layer of the ground beef mixture, then cover with 1 cup of cheese. Repeat the same process 2 additional times. Cover and bake in 350 degree oven for 30 minutes. Uncover and bake an additional 10-15 minutes. You may use your choice of beans and cheese. I grew up with my mom using ranch style beans and either cheddar or American slices. I made the casserole pictured with black beans and sharp cheddar. You can really just use whatever you have on hand.
