Instructions
For the soak
Step 1
Make 300ml hot coffee add 1 tbs sugar and 6 tbs Amaretto
Step 2
Leave to cool
For the filling
Step 3
Beat 4 egg yolks with 100g caster sugar
Step 4
Add 500g mascarpone and mix well
Step 5
Whisk 4 egg whites and pinch salt until firm
Step 6
Fold egg whites into yolk mixture until combined
Assembly
Step 7
Soak lady fingers in coffee mixture and lay in dish
Step 8
Add layer of mascarpone mixture, repeat with soaked lady fingers, finish with mascarpone mixture and dust with cocoa powder
