Crumbl 🙀 Churro Cookie

These CRUMBL churro cookies are thick and chewy cookies, topped with a deliciously cinnamon-y buttercream and sprinkled with more cinnamon sugar to make it taste just like a cinnamon! It is inspired by the CRUMBL bakery's famous churro cookie!

Instructions

Preheat oven to 350°F

Step 1
Line lg. baking sheet with parchement paper; set aside. In med. bowl, mix the ¼C sugar & cinnamon together; set aside.
Step 2
Cream butter, brown sugar, & sugar together until light & creamy.
Step 3
Add egg, egg yolk, lemon juice, & vanilla; mix until combined.
Step 4
Add flour, corn starch, baking powder, baking soda, salt, & cinnamon; mix just until this dry mixture disappears.
Step 5
Using lg. cookie scooper, scoop out 12 equally sized cookie dough balls. Roll each between palm of hand; roll them in the cinnamon-sugar mixutre. (Save the leftover cinnamon sugar for later.)
Step 6
Place cookies on prepared baking sheet leaving 1.5”-2” in between; gently flatten cookies to about 2 cm-thick. Bake (10 min.)
Step 7
Cool on the baking sheet (5 min.); transfer to cooling rack to cool fully.

Churro Buttercream

Step 8
While cookies are cooling, beat butter, powdered sugar, brown sugar, cinnamon, vanilla, & 1T-2T cream until light & fluffy. (If the buttercream is too thick add ½T cream at a time, & mix again until the desired consistency is reached.)
Step 9
Using a Wilton 35 tip, frost cooled down churro cookies.
Step 10
Add 1T brown sugar to cinnamon-sugar (leftover that you used to roll your cookie dough in) & sprinkle some of it on top of each frosted churro cookie. Enjoy.

Store these cookies at room temp. in air-tight container (up to 3 days.)
Step 12
Store in fridge in airtight container (up to 7 days.) Make sure to let cookie return to room temp. before enjoying it.
Step 13
Store in freezer in an airtight container (up to 2 mo.) Thaw in fridge overnight before enjoying them the next day!
