Instructions
Step 1
Prepare ingredients - halve peppers and remove seeds. Gently steam spinach or cook in olive oil until wilted - set aside. Grate parm and mozzarella.
Step 2
In a small bowl, combine ricotta, lemon zest, juice of 1/2 of the lemon, cooked spinach, and 3/4 of mozzarella and parmesan.
Step 3
Stuff red peppers with ricotta mixture and add to baking dish of your choice. Top with marinara sauce and remaining mozzarella and parmesan.
Step 4
Bake at 350F for about 10-15 minutes or until red pepper is cooked through and cheese is browned.
Step 5
Garnish with fresh parsley.
