Step 1
Score your tomatoes 4 times all around
Step 2
Bring water to a boil then add your tomatoes
Step 3
After 2 - 2 1/2 minutes remove the tomatoes and immediately add into an ice bath
Step 4
Peel and seed your tomatoes before cutting into small dices
Step 5
In a clean bowl add your tomatoes, minced garlic, basil , olive and oil and lemon juice; season to taste with the salt & pepper .

Mix it all together ; you can allow this to sit for 30min-1hour for for better flavor
Step 7
Served on top of the crispy bread and enjoy
