Instructions
Step 1
Add capsicum to pan to soften/char. Add mince and taco seasoning
Step 2
Add semi dried tomatoes, corn, beans and diced tomatoes.
Step 3
Add scallion once everything is cooked
Step 4
Serve in a bowl with corn chips. Add cheese if desired
