Ingredients
4 servings
2 cupsbrown rice
cooked
1 Tbspolive oil
1 lbground turkey
can also use ground chicken, pork, beef, or plant- based protein crumbles
0.5yellow onion
large, diced /2
11 tspfresh ginger
2 clovesgarlic
minced
14 ozcoleslaw mix
3 Tbsplow sodium soy sauce
glu- ten-free tamari, or liquid aminos
1 Tbsprice vinegar
1 Tbsptoasted sesame oil

wonton strips
Optional pping, or crispy rice noodles
Instructions
Step 1
1. Cook brown rice according to package directions and set aside.
Step 2
2. Heat olive oil in a large pan over medium heat.
Step 3
3. Add onion and cook until softened and translucent in color.
Step 4
4. Add ginger and garlic and cook 1 minute more, stirring frequently.
Step 5
5. Add ground turkey and cook until completely cooked through. Do not drain.
Step 6
6. Add 1/2 of the coleslaw mix, then add soy sauce and rice vinegar. Stir to coat.
Step 7
7. Cook for an additional few minutes or until cabbage starts to wilt.
Step 8
8. Add remaining coleslaw mix, and cook for a few more minutes.
Step 9
9. Add sesame oil and green onions.
Step 10
10. Spoon cooked brown rice into a bowl, then add egg roll mixture over rice. Top with wonton strips or rice noodles if desired.
