The Ballantines Glaze
0.25white onion
1 Tbsppineapple purée
2cloves garlic
1red chilli
1 tspsmoked paprika
¼ tspfive spice
¼ tspwhite pepper
50mlsoy sauce
50mlhoisin sauce
2 Tbspdark brown sugar
1 Tbspwhite wine vinegar
salt
1 shotWhiskey
The Prawns

Instructions
The Glaze
Step 1
Dice and fry the onion for 3 minutes, before adding pineapple, crushed garlic, and diced chilli for 2 minutes.
Step 2
Add in the other ingredients and adjust seasonings, and simmer for a few minutes til it’s reduced down to a glaze.
Step 3
Add the whiskey and set alight to burn off the alcohol.
The Prawns
Step 4
Ensure the Prawns are still frozen, so they don’t overcook
Step 5
Add the spices to the flour and dip the prawns in, followed by the egg then the panko crumbs
Step 6
Get a pan on a high heat with just enough oil to cover the bottom.
Step 7
Fry the prawns for less than 2 minutes a side in the hot pan, then remove onto kitchen roll to drain excess oil
To Finish
Step 8
Toss the prawns in the bbq glaze for a minute, adding half of the sesame seeds.
Step 9
Serve in a bowl topping with the remaining sesame seeds and chopped spring onion and coriander
