Instructions
Step 1
To a bowl add your beef, 1 cp buttermilk, 1/2 cp sour cream, 1 tbsp dill, salt, pepper, 2 tbsp Worcestershire sauce, and 1 tbsp oregano.
Step 2
Mix well, cover and refrigerate for at least one hour (up to 8 hours).
Step 3
In a large dry skillet, over medium heat, sauté your mushrooms. Cook until all the moisture has evaporated and they take a golden color.
Step 4
Reduce heat to medium. Move mushrooms to the outside of the pan. Add butter and shallot with a pinch of salt. Cook just until soft.
Step 5
Add your garlic to the center of the pan. Cook until fragrant. Combine this with your mushrooms.
Step 6
Remove from the pan and reserve for later.
Step 7
Return pan to medium high heat. Add your marinated meat and cook until some pink is showing. Reduce heat to low and simmer.
Step 8
In your marinade made, add remaining buttermilk, sour cream, beef base and dill.
Step 9
Mix well and add to the simmering beef.
Step 10
Once fully incorporated, add back your mushroom mixture. Continue simmering and stirring for 3-5 minutes.
Step 11
Combine prepared pasta, reserved pasta water and sauce.
Step 12
Allow to rest 10 minutes before serving.
Step 13
Taste- Adjust seasoning to your preference
