Step 1

Season the chicken with salt and pepper and fry in the pan with 4 cloves of garlic and 1 large knob of ginger.
Step 2

Meanwhile make up your satay sauce. Mix 1 tablespoon of curry powder, 3 tablespoons of soy sauce, 3 tablespoons of peanut butter, 3 tablespoons of honey and half a tin of coconut milk.
Step 3

When the chicken is cooked, add the mushroom and cook for a few minutes with the lid on.
Step 4

Add in the handful of spring onions and chopped red pepper and cook for 2 minutes (they should be served crunchy).
Step 5

Meanwhile, add your noodles to a pan of salted boiling water and cook for 4 minutes (don't over cook them or the dish will go stodgy).
Step 6

Add your sauce to the chicken with some fresh chillies or chillie flakes.
Step 7

Add the noodles to the sauce. Add a handful of fresh coriander and serve.
