Oven at 350 F

Cut poblano in half lengthwise, clean.
Step 3
In a pan, sauté bell peppers, onion, jalapeño, garlic. Add pumpkin seeds and sauté for 2-3 min.

Remove from heat. Stir in quinoa, green onions, cilantro, soy sauce, lemon juice.
Step 5
Spoon quinoa mix into poblano boats. Pour tomato juice into the deep baking dish, evenly layer poblano. Bake covered for 20 min.
Step 6
Sprinkle cheese and bake uncovered for 10 more min.
